A Delightful Journey into Gujarati Cuisine: Authentic Handvo Recipe

Ingredients:

For the Batter:

- 1 cup rice

- 1/2 cup split green gram (moong dal)

- 1/4 cup split Bengal gram (chana dal)

- 1/4 cup split black gram (urad dal)

- 1/4 cup sour yogurt

- 1/4 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- 1/2 teaspoon cumin seeds

- 1/2 teaspoon mustard seeds

- 1/4 teaspoon asafoetida (hing)

- Salt to taste


For the Vegetable Mixture:

- 1 cup grated bottle gourd (lauki/doodhi)

- 1/2 cup grated carrot

- 1/4 cup chopped spinach leaves

- 1/4 cup chopped fenugreek leaves (methi)

- 2 tablespoons finely chopped cilantro (coriander leaves)

- 2 green chilies, finely chopped

- 1-inch piece of ginger, grated


For Tempering:

- 2 tablespoons oil

- 1 teaspoon mustard seeds

- 1/2 teaspoon cumin seeds

- 8-10 curry leaves

- 2-3 dried red chilies


Instructions:

1. Wash the rice and lentils (moong dal, chana dal, urad dal) thoroughly and soak them in water separately for about 4-5 hours. After soaking, drain the water.


2. Grind the soaked rice and lentils together in a blender to make a coarse paste. Add sour yogurt, turmeric powder, red chili powder, cumin seeds, mustard seeds, asafoetida, and salt to the paste. Mix well and let it ferment for 6-8 hours or overnight. The fermented batter should have a thick consistency.


3. In a separate bowl, combine grated bottle gourd, carrot, spinach leaves, fenugreek leaves, cilantro, green chilies, and ginger. Mix them well.


4. Heat oil in a small pan for tempering. Add mustard seeds, cumin seeds, curry leaves, and dried red chilies. Once the seeds start spluttering, pour this tempering over the vegetable mixture and mix thoroughly.


5. Add the tempered vegetable mixture to the fermented batter and mix well.


6. Preheat the oven to 180°C (350°F). Grease a baking dish or a round cake pan with oil or ghee.


7. Pour the batter into the greased dish and spread it evenly.


8. Bake the Handvo in the preheated oven for about 40-45 minutes or until a skewer inserted in the center comes out clean and the top turns golden brown.


9. Once done, remove the Handvo from the oven and allow it to cool for a few minutes. Cut it into desired shapes and serve.


10. Gujarati Handvo can be enjoyed as a standalone dish or with green chutney, tamarind chutney, or yogurt.
