For Assembling:

- 8 pav (Indian buns), sliced horizontally

- Green chutney (cilantro-mint chutney)

- Tamarind chutney

- Dry garlic chutney

- Fried green chilies (optional)

- Butter or oil (for toasting the pav)

Instructions:

1. Prepare the Potato Filling (Batata Vada):

   - Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter.

   - Add ginger-garlic paste, chopped green chilies, asafoetida, and curry leaves. Sauté for a minute.

   - Add turmeric powder, red chili powder, and salt. Mix well.

   - Add mashed potatoes and chopped coriander leaves. Mix thoroughly.

   - Cook the mixture for 2-3 minutes, stirring occasionally, until the spices are well incorporated. Remove from heat and let it cool.

2. Make the Batter:

   - In a mixing bowl, combine gram flour, turmeric powder, and salt.

   - Gradually add water while whisking continuously to form a smooth batter. The consistency should be thick enough to coat the potato filling.

3. Shape and Fry the Vadas:

   - Take a portion of the potato filling and shape it into a round ball or patty.

   - Heat oil in a deep pan or kadai over medium heat.

   - Dip each potato ball/patty into the prepared batter, ensuring it is coated evenly.

   - Gently drop the coated ball/patty into the hot oil and fry until golden brown and crispy.

   - Remove the vadas from the oil using a slotted spoon and place them on a paper towel to drain excess oil.

4. Assemble the Vadapav:

   - Slice the pav horizontally, but not all the way through.

   - Spread a generous amount of green chutney on one side of the pav and tamarind chutney on the other side.

   - Sprinkle some dry garlic chutney on the chutney side of the pav.

   - Place a hot batata vada in the center of the pav and press it gently.

   - If desired, add a fried green chili on top of the vada.

   - Repeat the process for the remaining pav and vadas.

5. Toast the Vadapav:

   - Heat a griddle or tawa over medium heat. You can also use a regular pan.

   - Spread some butter or oil on the hot surface.

   - Place the assembled vadapav on the griddle and toast it until the pav turns golden brown and crispy.

6. Serve and Enjoy:

   - Remove the vadapav from the griddle and serve it hot with extra chutneys on the side.

   - You can also wrap the vadapav in a piece of parchment paper for a truly authentic street food experience.

   - Enjoy this delicious vadapav with a cup of hot masala chai or as a quick and satisfying meal on the go.
